Apple Bundt Cake with Cider Glaze


We are currently in Nashville for the next 10 days, but before we left town I wanted to make something to take to my family but also use up the rest of the apples & cider I had bought earlier in the week. I had an idea to do some kind of apple cake, and after looking at several different recipes I ended up coming up with my own. I love how it turned out!

Whole Wheat English Muffins


Days seem to be flying by lately and it's hard to believe that summer is coming to a close. And even after being out of school for 4 years, it still feels strange not to be in Auburn this time of year. It's hard to believe that I've been out of college for the same amount of time I spent there. Those days went by far too quickly. I think Fall is when David & I miss Auburn the most, because some of our fondest memories happened during that time. The craziness of rush, tailgating & football games with friends, rolling Toomer's Corner, Fall formals & date parties, etc. There's just something uniquely special about Auburn that you can't fully grasp without being a student there. I'll always be thankful for the life-long friends and amazing husband that I met during my time there.

Speaking of my sweet husband, he asked if I could pick up some english muffins for him at the store this week for breakfast. We've made a huge effort over the last year to switch to a more "real food" mindset, cutting out as much processed foods as we can. I'd say we live by the 80/20 rule, with 80% of what we eat being healthy, clean, whole natural foods & allow ourselves to indulge about 20% of the time. The 20% typically happens when we eat 1 lunch & 1 dinner out on the weekends. I have to say that since we've made this change, we both feel SO much better and are much healthier overall. I also just don't keep things in the house that we can't resist. I have a hard time resisting sweets & soda, so I don't keep them in the house. Back to the english muffins...the ones at the store had way too many ingredients to fit into our "real food" rule so I decided to make them myself.

Pecan Chocolate Chip Bagels


I have been wanting to try my hand at these for awhile. I love bagels. Breakfast, lunch, dinner...I'll take them any time of the day. Never with cream cheese though. Gross. Have I mentioned I don't like dairy? Usually I top mine with a little peanut butter, almond butter or preserves. And I have to say, these are really good with peanut butter. I may or may not have already eaten two of them.

These really weren't hard to make, they just took awhile because of having to rise for an hour, boil for 2 minutes & then bake for 15 minutes. I'll definitely be making these again. I'm already dreaming of other combinations. Apple Cinnamon, Cranberry Orange, Lemon Blueberry...

Fruit Salsa with Baked Cinnamon Chips


Happy Friday! Hope you're staying cool inside or by the pool because it is HOT! The kind of hot where you step outside early in the morning and it's already hard to take a breath because of the humidity. I love spending as much time as possible outside, but with the heat index hitting triple digits today, I think I'll stick with the AC.

This recipe is a nice twist on your normal salsa. I love serving it with cinnamon tortilla or pita chips. But it's also great to serve on chicken or fish. It's nice to make during the summer because the fruit is in season, which means it's cheaper!

Cinnamon Apple Chips


Here's a yummy & healthy snack to help you cut down on all those potato chips! Making your own apple chips is super easy and it's a great alternative to some of the unhealthy options we tend to gravitate toward. Kids love them too!

This is a really easy recipe, but it takes awhile for them to dry out in the oven. So make sure you start this when you'll be home for a couple hours. I usually will put them in the oven after I make dinner, because I know we'll be home the rest of the night.
