Nutella-Stuffed Cookies with Sea Salt

We don't keep many sweets in the house (other than my dark chocolate bar hidden in the freezer), so I love the chance to make some sweet treats for a special occasion. We're having dinner with some friends tomorrow night, so I decided to make some cookies to share. In my opinion, if you're going to have dessert, you might as well have the real thing. We don't skimp on ingredients over here. You're not going to find me substituting black beans for flour or avocado for butter. I'd rather have the real thing and run an extra mile tomorrow. Am I right?

One Pot Tomato Basil Pasta

I love finding new recipes to try on Pinterest. I came across this pasta recipe recently, but tried it for the first time tonight. I'm not sure when it happened, but somehow Wednesday has become pasta night in our house so I'm always looking for new recipes to try. This will definitely be a repeat in our house after trying it tonight! I can't wait to try it with fresh tomatoes once the Farmer's Market starts this summer.

Crunchy Asian Chicken Salad

After 4 days of wonderful (but heavy) food in DC, all I wanted was a big salad. This salad is so easy to make, and it's one of our favorite meals during the summer. You could easily make this gluten free by omitting the ramen noodles and using GF soy sauce.

Washington DC

This past weekend David & I went to Washington DC for 4 days. DC is one of my favorite cities to visit, and I think David has become a huge fan of it now too. One thing that is so nice about DC is that most of the major attractions are free! The Smithsonian museums, monuments, National Archives, Capital Tour, Holocaust Museum, etc are all free.

Weekend Getaway

David and I are headed to Washington, DC in the morning for a little belated Anniversary trip. I surprised him with the trip for his birthday this year, so instead of going away for a weekend for our anniversary in March, we get to celebrate again this weekend! DC is one of my favorite cities to visit, but it's been a few years since I've been and it'll be the first trip for David since he was little. We can't wait to explore the museums, take a night tour of the monuments, visit the Capital & Arlington, and eat lots of good food!

Wheat Berry Salad with Citrus-Shallot Vinaigrette

This salad is one of my favorite side dishes during the summer. It's simple, healthy and a crowd pleaser. Typically I'll make a double batch so I can have it for lunch during the week too. It's great warm or cold, but I prefer it chilled. One thing to note is that the wheat berries don't cook quickly, typically taking about an hour, so usually I'll make this earlier in the day so it's ready to go for dinner.

Tonight David and I had plans to go to our friends' house to help remove tree limbs that were covering their front yard from a storm that went through Peoria last night. We were also going to have dinner at their house, so I decided to bring some of my favorite cookies to share.

Flourless Chocolate Cake

I apologize for the lack of photos in these first couple of posts. I wanted to highlight a couple things I made this week, but only had pictures of the end product. From now on, I'll be taking pictures of each step in the recipe :) Flourless Chocolate Cake is one of my favorite desserts. My mother-in-law follows a gluten free diet, so this was the perfect cake to make for her birthday this week.

Quick Yeast Rolls

There are few things I love more than a warm yeast roll straight out of the oven. I decided to try my hand at them for the first time this week and loved this quick recipe I found on Pinterest. Many recipes I came across were going to require a couple hours of prep and rising before baking, and considering I decided to make these about an hour before dinner, I just didn't have that kind of time. But these quick rolls were just what I was looking for and were AMAZING!
