Asian Chicken Wraps


The theme for dinners this week is definitely quick & easy. We're leaving for vacation on Thursday, so this week has been a little crazy with me trying to finish everything up for work for the rest of the month and get us ready to go at the same time. Needless to say, it's not leaving me much time to get creative in the kitchen at night. Tonight, I wanted something fresh & healthy that could be ready in under 30 minutes. These Asian Chicken Wraps are a great summer meal, and easy to customize with your favorite fruits & veggies.


For the wraps, you'll need 1 cup of mandarin oranges, 2 cups broccoli slaw, 1/4 cup slivered almonds & 1/2 cup chow mein noodles.


Boil 2 chicken breasts until cooked through (about 15 minutes) & place in a bowl to shred.


Measure out 1 cup of teriyaki sauce.


Add the teriyaki sauce to the bowl of shredded chicken.


Mix well until all the chicken is covered.


Heat a non-stick skillet over medium heat. Add chicken & teriyaki sauce, stirring frequently, until heated through (about 5 minutes).


Add chicken, broccoli slaw, mandarin oranges, almonds & chow mein noodles to a bowl & mix well.


Warm whole wheat tortillas in the microwave or on the stovetop, 10 seconds per tortilla.


Place about 1/2 a cup of your Asian Chicken mixture in the center of a tortilla. If you're using large tortillas, you'll probably add more like 1 cup.


Fold the two ends up around the mixture.


Fold one side over.


Then roll over your tortilla.


Slice in half and serve immediately.

Yield: 3 servings
  • 2 chicken breasts, cooked & shredded
  • 2 cups broccoli slaw
  • 1 cup teriyaki sauce
  • 1 cup mandarin oranges
  • 1/2 cup chow mein noodles
  • 1/4 cup slivered almonds
  • Whole wheat tortillas (6 small or 3 large)
